Called 'salt cream' by local harvesters, faerie's creme de sal is the Portuguese
version of its Celtic cousin, fleur
de sel.
Like cream that rises to float on top of milk, creme de sal is formed on the top
of the salt pond when the weather conditions permit. Using wooden rakes,
the creme de sal is lightly skimmed from the uppermost layer of the salt pan.
Our creme de sal is certified organic by France’s Nature & Progres —
an extremely rigorous salt certification process that insures purity and
quality.
Variations in mineral content and harvesting methods create the unique look and
taste of individual sea salts. Differences in flavor are subtle yet
delicious. To get the most out of sea salts, add them after cooking and do
not use sea salts on highly seasoned foods.
