Imagine the delicate salt crystals of fleur de sel combined with a gentle smoke
flavor that has an undercurrent of chardonnay.
Gentle winds blowing from the east forms fine, downward growing crystals on the
very top layer of the salt ponds. A special rake that barely skims the
surface is used to harvest these unique crystals. Pale pink when
harvested, fleur de sel dries to small flaky crystals with a moist texture and
a slight grey/pink cast.
After harvesting, this unique salt is then smoked using the wood of select
French oak wine barrels that were used to age French chardonnay wine.
During smoking, the fleur de sel turns a pale brown and absorbs the complex
flavor combination of smoke, oak and chardonnay.
