For thousands of years, salt was harvested by hand. Wooden rakes were used
to capture the salt crystals which were placed in shallow pans where the natural
heat of the sun would dry the salt. With the coming of the Industrial
Revolution, mechanized salt harvesting made rare and expensive salt a common
item available for every table.
Today we have 'rediscovered' the delicious benefits of sea salt harvested in the
traditional manner. The natural combination of pristine sea water and the
sun creates a magic that is impossible to duplicate with modern salt
mining. The distinctive characteristics of each salt pond contribute to
the individual taste of the sea salt that is harvested.
