Kosher salt gets its name from its integral role in making meat kosher.
Jewish law dictates that blood must be extracted from meat prior
to consumption.
Kosher sea salts are raked during evaporation to create flaked crystals that
absorb more moisture and make these salts ideal for curing meats.
Because it is flaked, a pinch of kosher sea salt contains less salt (and
therefore less sodium) than a pinch of regular salt. But the flaked
structure provides more surface area which produces a stronger salt taste on
the tongue.
