When the Louisiana territory was given to Spain by Napolean in 1762, groups of
French Acadians migrated to the territory from France and the formerly French
Nova Scotia. They settled in the swamplands and waterways of New Orleans
bringing some of the flavors of their native country with them. Eventually
the name 'Acadians' evolved to 'Cajun'.
The influx of immigrants as the Louisiana territory continued to change hands
brought new flavors into New Orleans adding the subtle heat and spices of Haiti,
Africa and the Native Americans. The combination of cultures created a new
and distinctive New Orleans taste known as Cajun.
