With a reputation as an aphrodesiac in Roman literature, marjoram is well
established in western cooking. Although most popular as an herb for
vegetable dishes, marjoram is used extensively in German-style sausage
making. For a new taste, sprinkle marjoram on freshly broiled fish.
Marjoram is very good with anchovies, artichokes, beans, cabbage, carrots,
cauliflower, cheese, chicken, corn, duck, eggplant, eggs, fish and shellfish,
lamb, mushrooms, onions, pork, potatoes, poultry, spinach, squash, sweet
peppers, tomatoes, veal, and venison.
Marjoram combines well with basil, bay leaves, chili, cumin, garlic, paprika, parsley, rosemary, and sage.
