A member of the sunflower family, tarragon is sweet and aromatic and is
reminiscent of anise. Popular in the middle ages as a plant for driving
away dragons, today the herb is most commonly used in salads and to flavor
vinegar.
Tarragon is a great addition to delicate poultry dishes or herb sauces based on
sour cream or mayonaisse. Tarragon is also an excellent seasoning for
mushrooms.
In French cuisine, tarragon is widely recognized for its use in Bearnaise sauce,
a more spicy variant of Hollandaise.
For a delicious variation on holiday leftovers, mix tarragon with mayonnaise and
use on turkey sandwiches.
Tarragon is very good with artichokes, asparagus, eggs, fish and seafood,
potatoes, poultry, salsify, tomatoes, and zucchini.
Tarragon works well with basil,
bay leaves, chervil, chives, and parsley.
