expensive of spices, rivaling the costs of vanilla and saffron.
Although cardamom is used in a variety of cuisines, it is most commonly found in
the foods of India and Scandinavia. Indian cooking features cardamom in
pungent dishes like curries, while Scandinavians use cardamom in many dessert
recipes.
