Coriander seeds come from the fruit of a plant related to parsley. The
leaf of this same plant is a popular herb better known as cilantro.
The taste of coriander resembles a blend of lemon and sage. It is a common
ingredient in curries and a delicious complement to carrots. Coriander is
also used in a variety of sausages and goes very well with many types of
seafood. In northern Europe, the seeds are sometimes mixed with bread.
Coriander has been cultivated since very ancient times. In addition to its
use as a spice, coriander was employed as an aromatic stimulant by Hippocrates
and other Greek physicians. The Chinese believed that coriander seeds
confer the power of immortality.
The conquering Romans introduced coriander to Britain. In modern England,
the chief consumption of coriander seeds is in flavoring alcoholic liquers, for
which purpose it is largely grown in Essex.
