Ginger is prized throughout the world for its pungent taste and medicinal
properties. Since ancient times, healers in a diverse array of cultures
have used this plant to help settle upset stomachs.
Chinese herbalists have relied on ginger as a medicine and flavoring for more
than 2,500 years. The early Greeks mixed it into breads (the first
gingerbreads) and North American colonists sipped nausea-quelling ginger beer,
the precursor of modern ginger ale.
A botanical relative of marjoram and turmeric, the ginger plant is native to
southeast Asia and is now also extensively cultivated in other tropical
areas. It is the plant's aromatic rhizome (underground stem) that is used
for culinary and medicinal purposes. Whole rhizomes, commonly called
ginger roots, have a lively, hot flavor and peppery aroma.
Ground ginger is more subtle and sweet in flavor. It is often found in
curry powders and is a key component of Chinese five spice powder, the
traditional French spice blend quatre epices and berebere, a spice mixture from
Ethiopia.
Stir ground ginger into honey and serve on hot biscuits for a delicious
treat. To enliven a white or velotte sauce, add one teaspoon of ground
ginger to each cup of sauce.
