Today, pepper is such a popular and common spice that many
people do not realize the importance that it has had in
world history. There was a time when pepper was so
rare that it had the value that we now give to gold.
In fact, during the middle ages, pepper was often treated
as a currency to pay rent, taxes or dowries.
Although other spices encouraged exploration of new trade
routes, none had the importance of pepper. It was the
search for less expensive ways to get pepper out of Asia
that drove explorers around the Cape of Good Hope at the
southern tip of Africa and eventually west across the
Atlantic.
We offer four individual varieties of peppercorns as well
as faerie's special peppercorn blend. Black, white
and green peppercorns all come from the Piper nigrum
plant that is native to southwest India. Pink
peppercorns are not true peppercorns but actually the dried
berries from the Baies rose plant. They're
cultivated in Madagascar and imported via France.

black peppercorns result when the berries of the pepper
plant are harvested just before they are ripe and then dried in
the sun until the outer skin turns black. Black pepper is
less hot than white, but more pungent and aromatic.

white peppercorns are the hard kernel taken from ripe
berries by removing the bright red outer skin and fruit.
White pepper lacks the sharp pungency of black pepper but has more
heat. It is often preferred in light colored sauces and
seafood dishes because it does not stand out against the food as
black pepper does.

green peppercorns are produced from soft, unripe berries
and sold both dried and in brine. Green peppercorns are
common in Thai cuisine and complement both duck and game.
Try grinding green peppercorns in butter and brushing on meat
while grilling.

Whole pink peppercorns are odorless and it is only grinding that
releases their delicate peppery flavor. Seen most often in
peppercorn blends, pink peppercorns are also delicious in light
