Bourbon whiskey was born in the years following the American Revolution.
Grateful to the French for their help, many of the new counties established west
of the Allegheny Mountains were given French names. One such county was
named Bourbon after the French royal family. Eventually these counties
were divided into smaller regions but the area of Bourbon county was still
referred to as 'Old Bourbon'.
Located within the area of Old Bourbon was the primary Ohio River port.
From this port whiskey and other products were shipped to market. Corn
whiskey from this region was shipped in barrels labeled 'Old Bourbon'.
Eventually the term 'bourbon' became the name for any corn-based whiskey.
Bourbon whiskey is a distinctly American liquor. It must be at least 51%
corn based and aged for two years in new, white oak barrels that have been
charred. The degree of charring and the length of the aging process
determine the particular characteristics of a bourbon whiskey.
