Growing up in the South, you quickly learn to appreciate anything that brings a
relief from the ever present heat and humidity. So it isn't surprising
that the first records of iced tea come from the South. Originally ice was
scarce and it was simply sweetened tea that had been allowed to cool. As
ice became more available it was added to the tea to create the beverage today
that is known as sweet tea but is still just tea in the South.
While more than 80% of tea consumption in the US is in the form of Iced tea,
much of it is offered pre-bottled in the form of beverages that are often over
sweetened and over flavored. For the tea enthusiast, these tea beverages
can't compare to the pleasures of freshly brewed and iced tea that is sweetened
and flavored precisely to taste.
It's easy to make great iced tea. Brew as usual except use twice the
amount of tea you would normally use. Steep for the same amount of
time. After brewing dilute with an equal amount of cold water (or
ice). Garnish as desired.
