Spices are a very important part of Indian cuisine. Classic Indian dishes
are well seasoned and aromatic. These dishes are also highly
individual. The spice mix for a particular dish will vary not only
regionally but from family to family.
For centuries, India sat at the crossroads between east and west. The
flavors of India spread as travelers experienced Indian foods and took those
flavors back to their home lands. The curries of Asia are derivations of
Indian curries.
The British colonial years created a taste for Indian dishes that brought Indian
cuisine to the shores of Britain where it has become a regular part of the
British culinary experience.

Curry is the most well known type of Indian food. The word curry is a
generic terms that refers to a wide range of dishes seasoned with the
characteristic spices of curry: coriander, cumin and tumeric. The
popularity of curry and other Indian dishes has spread due to centuries of trade
between India and other nations.
faerie's finest offers three distinct curry seasoning blends: green yellow and
red.
Our green curry is our most 'traditional' curry using cumin, fennel, and
coriander with other spices to create a curry that is sure to please.
Although it has a moderate heat level the emphasis is on a complex blend of
flavors.
The yellow curry is our mildest curry. It has the traditional Asian
flavors of cardamom and coriander but also adds in ginger and turmeric to create
its distinctive taste and color.
Our red curry powder is for those that like an extra punch to their
curry. Paparika and cayenne pepper blend with cumin, fennel and other
seasonings to create a very spicy curry.
faerie's finest also offers a garam masala. A masala is a blend of
spices. Garam literally translates to mean 'hot' but this is actually
about the intensity of the flavor rather than the heat of cayenne or other
peppers.

The many spices used in Indian cuisine allow each individual chef to create
their own particular flavor combinations.
Pre-ground spices offer great convienance while whole spices freshly ground will
produce the fullest flavor.
For best flavor, lightly roast ground spices over medium heat in a non-stick
skillet. Add spices toward the end of cooking to prevent spices from
becoming burnt.
