decadent vanilla cheesecake

featuring faerie's vanilla fantasy sugar and vanilla extract

crust
1 cup graham cracker crumbs
3 tbsp vanilla fantasy sugar
½ tsp ground cinnamon
2 tbsp melted butter or margarine

  • Combine crust ingredients and pat into bottom of 9" springform pan; set aside.
filling
2 (8 oz) packages of cream cheese
2/3 cup vanilla fantasy sugar
1 tsp pure vanilla extract
3 eggs

  • Beat softened cream cheese with sugar and vanilla in a large bowl until light.
  • Add eggs, one at a time, beating until smooth.
  • Pour over crust.
  • Bake at 375° for 25 minutes or until set.
  • Remove from oven and cool on a wire rack for 15 minutes.
topping
1 cup sour cream
2 tbsp vanilla fantasy sugar

  • Combine topping ingredients and pour over cooled cheesecake.
  • Return to 375° oven for 10 minutes.
  • Cool to room temperature on wire rack.
  • Cover and chill at least 3 hours (overnight is better).
  • Excellent plain but may be topped with fresh berries.
