This is a great way to make a delicious second meal from leftover roast chicken. It is also excellent with turkey.

4 - 5 cups diced chicken

3 green onions sliced
1 red pepper diced
1 yellow pepper diced
1 rib of celery diced

1 - 1 ½ cups mayonnaise
2 tsp. country style dijon mustard
1 tbsp cider vinegar
2 tsp faerie dust
2 tsp herbes de provençe

Blend together mayonnaise, mustard, cider vinegar, faerie dust and herbes de provençe.
Add in diced vegetable and mix to coat.
Add in diced chicken and mix well.
Best when refrigerated for at least an hour before serving.
