french spiced ham

featuring faerie's quatre epices

small smoked ham - approx 2 lbs
2 tsp faerie's quatre epices
1/4 of a pineapple diced (1-1/4 cups)
1/2 cup bourbon whiskey
1/2 cup brown sugar

  • Rub ham on both sides with one teaspoon of the quatre epices.
  • Mix together diced pineapple, whiskey, brown sugar and remaining quatre epices.
  • Spread mixture over the ham.  Cover with foil and bake in a 325 degree oven for 40 minutes.
This dish is delicious served with winter spice sweet potatoes and red pepper pineapple.  One whole pineapple will make all three recipes.
