featuring faerie's luscious lemon sugar, vanilla extract and lemon extract |

2 cups all purpose flour
2 tsp baking powder
½ tsp salt
1 stick unsalted butter or margarine, softened
1 cup luscious lemon sugar
1 large egg
grated zest of one lemon
1 tbsp faerie's vanilla extract
½ tsp faerie's lemon extract

- In a medium bowl, sift together the flour, baking powder and salt.
- With an electric mixer in a large bowl, beat butter or margarine about 30 seconds until creamy.
- Add the sugar and continue beating 1 to 2 minutes until light and fluffy.
- Beat in egg, lemon zest, vanilla extract and lemon extract until well blended.
- Into this mixture, gradually add the flour mixture until blended.
- Form the dough into a ball and divide into 3 pieces.
- Flatten each piece to a disk and wrap tightly in plastic.
- Refrigerate for several hours or overnight.
- Preheat oven to 350 degrees.
- On a lightly floured surface, roll out one disk 1/8" thick with a rolling pin.
- Keep remaining dough refrigerated.
- Using cookie cutters, cut into desired shapes.
- Bake 8 - 10 minutes until lightly golden around the edges.
- Cool on wire racks.
- These cookies may be decorated before or after baking like traditional rolled cookies.
