featuring faerie's tuscan blend and lime-garlic salt

6 - 10 Roma tomatoes
2 - 3 large cucumbers
¼ - ½ red onion
¼ cup extra virgin olive oil
¼ - ½ cup rice or red wine vinegar
2 tbsp tuscan blend
2 tsp lime-garlic salt
At least an hour before preparation (preferably a full day), mix olive oil and tuscan blend.
Chop tomatoes into large, yet bite size chunks.
Slice red onion so you have long, skinny strips, add to tomatoes in a large bowl.
Pour tuscan blend/oil mixture over tomato and onion pieces.
Chop cucumbers into half circles. Add to bowl with tomatoes and onions.
Sprinkle lime-garlic salt over cucumbers.
Pour vinegar over contents of bowl, toss.
Cover bowl, let set in refrigerator for at least an hour.
