sweet onion potatoes

potatoes
sweet onions (Vidalia, Sweet Maui, Walla Walla, Arizona Sweet, Texas Supersweet or Sweet Florida)

salt and pepper

Dice potatoes into bite size pieces.
Boil in salted water until tender.
While potatoes are cooking, saute sliced sweet onions in butter or olive oil until tender.
Season to taste with salt and pepper.
When potatoes are done, drain well.
Add a bit of butter or olive oil and sprinkle generously with vegetable magic.
Top potatoes with sauteed onions and serve.
