sweet onions (Vidalia, Sweet Maui, Walla Walla, Arizona Sweet, Texas Supersweet or Sweet Florida)

salt and pepper

  • Dice potatoes into bite size pieces.
  • Boil in salted water until tender.
  • While potatoes are cooking, saute sliced sweet onions in butter or olive oil until tender.
  • Season to taste with salt and pepper.
  • When potatoes are done, drain well.
  • Add a bit of butter or olive oil and sprinkle generously with vegetable magic.
  • Top potatoes with sauteed onions and serve.
