easy cajun chicken

featuring faerie's cajun blend

  • Take one boneless, skinless chicken thigh and pat dry.

  • Sprinkle cajun blend generously on both sides.

  • Heat a non-stick skillet and add a small amount of olive oil.

  • Put chicken in pan and brown on both sides over medium heat.  (Use higher heat if you want the chicken 'blackened').

  • When both sides are browned, reduce heat to low, at ½ inch of water, cover and cook for about 12 minutes.
