blueberry creme muffins

featuring faerie's blueberry flavor and 2x vanilla concentrate

2 cups all purpose flour
2-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp ground nutmeg
1/3 cup sugar

  • Preheat oven to 375°.
  • Line 2 standard size muffin pans with muffin cups.
  • In a large bowl, sift together dry ingredients.  Make a well in the center.
1 stick margarine or butter, melted and cooled
2 eggs
1/2 cup milk
1 tsp faerie's 2x vanilla concentrate
1 tsp faerie's blueberry flavor
1/2 cup fresh blueberries, mashed

  • Mix together above ingredients.
  • Add to dry ingredients and stir until blended.  Do not overmix.
2 cups fresh blueberries
faerie's vanilla nutmeg sugar

  • Gently fold in remaining blueberries.
  • Spoon batter into muffin cups.  Cups should be 1/4 to 1/3 full.
  • Sprinkle vanilla nutmeg sugar on each muffin — approximately 1/4 tsp per muffin.
  • Bake until risen and golden (about 15 minutes)
  • Cool on a wire rack for 2 minutes and then remove muffins to rack to fully cool.
  • Makes approximately 24 muffins.
  • Muffin sizes vary. For larger muffins, increase baking time.
