corn leek chowder

featuring faerie's vegetable magic

4 ears of fresh corn
1 leek, cut in half and sliced into slivers
2 quarts chicken stock
6 tbsp butter
6 tbsp flour
2 tsp faerie's vegetable magic

  • Cut the corn off of the cob and set aside.
  • In a small stock pot, heat the chicken stock and corn cobs over medium heat for about 20 minutes.
  • Turn off stove, cover and let sit for 30 - 40 minutes.

  • Remove cobs and strain broth into a 2 quart measuring bowl.

  • In the small stock pot, melt butter.
  • Add leek, corn and vegetable magic and simmer for 5 minutes, stirring regularly.
  • Add flour to pot and mix in well.
  • Gradually add stock back into pot, stirring until smooth.
  • Simmer for about 15 minutes.
  • Salt and pepper to taste.
